Pork and cider casserole in the Morso Multi Cocotte

Today the weather wasn’t all that great so we decided to cook something inside with the NAC cast iron products. A friend of mine suggested a pork casserole with cider – sounds delicious! Not only that, it’s pretty simple too, using a recipe from Jamie Oliver which we adapted a little.

To start off I preheated the oven to 150℃ and put the cast iron casserole dish over a medium heat. After browning and setting aside the pork, I threw the chopped leeks, carrots, celery and apples into the casserole dish. I let them cook for a few minutes and then threw the pork back in along with the cider and chicken stock.

The Morso ash scraper with blow pipe is really useful here to get some more air to the fire.

Once it started simmering, the lid went on. I chucked it in the oven and got back down to the office to get some work done. One of the big advantages of this casserole dish and our other cast iron cooking items, is that they can be used on the fire and also in the oven.

After around 2 hours, the pork was tender and ready to be taken out for the final step. For this, we mixed in some corn flour and cooked it slowly on the hob until it thickened. We served ours topped with chopped fresh parsley and mashed potato on the side (I have to admit though – we cheated and used instant mash which is pretty good when you are short of time).

After that delicious meal, it is unfortunately time to get back to work but stay tuned for next week’s session of #Atmostlunches!
